Growing up in the South, brings a different way of thinking about life. Passion, from hunting, fishing, crabbing, and yes, eating the fine cuisines of Cajun Country.  The majority of the year, we live in a beautiful sub-tropical fishing and hunting paradise we call Acadiana.  We also work in the muddy/ sloppy sub-tropical conditions, and still prepare for hurricanes, the treacherous storms coming from the gulf.  Life can get rough here, but it’s hard to break this lifestyle and these traditions.  With the storms from the gulf, we are always on the search for an alternative power source. It’s not if the power goes out, but when.  On another note, you come to love the food and hospitality.  Like other places, it’s all about service and good food.  When it comes to fine cuisines, bold, and flavorful food; some of the best cooks and restaurants, are based, and come out of the South.  From the fresh/ salt water fish, crab cakes, alligator, shrimp, crawfish, oysters, ducks, down to the smothered rabbit, pick your poison.  Southern Louisiana is a place you have to visit.
